Dad’s ‘jok’ Eggs

  • Scramble eggs

  • Pinch of salt

  • Dash of fish sauce

  • Bit of oil

Mom's Chicken Curry

Curry Rub

  • 2 teaspoon salt

  • 1 teaspoon pepper

  • 2 teaspoon sugar

  • 2 teaspoon lemon grass

  • 2 teaspoon diced garlic with oil (or half of a garlic)

  • couple slices of ginger

Curry Sauce

  • 2 long sticks of lemon grass

  • 2 soup spoons of yucky fried onion oil (‘cuh-ang ew’ // ‘chong ye-ow’)

  • 1 can of coconut milk

  • ketchup

  • 2 soup spoon of Ca Ri Ni An Do curry powder

  • 4 pieces of rubbed chicken thighs

Instructions

  1. Remove fat from chicken

  2. Mix spices and curry powder together (not ketchup)

  3. Rub spices onto chicken

  4. Cover and leave for at least half a day

  5. Smash lemon grass, not squish, just hit it and leave it with the chicken

  6. When cooking, add lots of ketchup

Mom's Vietnamese Butter (Bơ)

Ingredients

  • 3 eggs

  • sugar

  • 1/2 cup of oil

  • 1 teaspoon of butter

  • pinch of salt

Directions

  1. Separate egg yolks from egg whites

  2. Beat egg yolks in one direction

  3. Add some oil

  4. Beat again in same direction

  5. Add more oil

  6. Still beating in same direction

  7. Repeat until oil runs out

  8. Add butter

  9. Add a pinch of salt

  10. Finish beating in same direction until texture looks good

Mom’s Awesome BBQ Chicken

Ingredients

  • Salt

  • Sugar

  • Pepper

  • Hai o Reum Korean BBQ sauce

  • Lee Kum Kee Oyster sauce

  • Lee Kum Kee Hoisin sauce

  • Cooking alcohol

  • Garlic oil

  • 10 pounds of chicken wings

Making the Sauce

  • 33.8 of bottle of Korean BBQ sauce

  • 2 tablespoon of Hoisin sauce

  • 2 tablespoon of oyster sauce

  • 2 tablespoon of cooking oil

  • 2 tablespoon of garlic oil

  • 2 tablespoon of sugar

  • 1 tablespoon of pepper

  • 1 teaspoon of salt

Preparing the Chicken

  1. Rinse clean

  2. Cut off excess fat and bad parts

  3. Dip dry

  4. Put into bucket of sauce

  5. Put into bag

  6. Refrigerate over night

Mom's Coffee Flan

Flan:

  • 12 eggs (3 separate white)

  • 1 can of condense milk {4oz}

  • 1 1/2 can of boiling water (use condense milk can)

  • 1 can of milk (use condense milk can)

  • Whisk together

  • Pour into strainer; don’t want chunks

  • 2 drops of vanilla extract

Top Sugar:

  • Black pan on stove top

  • 1 bowl of sugar

  • 1/3 cup of water (poured on edges of pan)

  • + Add a bit of coffee

  • Pot on medium until brown (do NOT stir with spoon – hold pot and shake)

  • ‘ If too thick: add water but turn down fire

  • Stir

Directions:

  1. Heat for 350

  2. Pour boiled water in big pan half way up to the cups

  3. Place cups inside

  4. Pour sugar in cups

  5. Pour other thing on top

  6. 55 minutes

Hung’s Meatloaf

Meatloaf:

  • 1 chopped onion

  • garlic powder (Hung’s secret)

  • 1.5 lbs of ground beef

  • 1 egg

  • 1 cup of breadcrumbs

  • 1 cup of milk

  • salt & pepper

Sauce:

  • 1/3 cup of ketchup

  • 2 tablespoon of brown sugar

  • 2 tablespoon of [honey or spicy] mustard

Directions:

  1. Preheat 350

  2. Mix

  3. Baking pan & sauce on top

  4. 350 covered for 30 minutes

  5. 350 uncovered for 30 minutes
