Mom's Chicken Curry

Curry Rub

  • 2 teaspoon salt

  • 1 teaspoon pepper

  • 2 teaspoon sugar

  • 2 teaspoon lemon grass

  • 2 teaspoon diced garlic with oil (or half of a garlic)

  • couple slices of ginger

Curry Sauce

  • 2 long sticks of lemon grass

  • 2 soup spoons of yucky fried onion oil (‘cuh-ang ew’ // ‘chong ye-ow’)

  • 1 can of coconut milk

  • ketchup

  • 2 soup spoon of Ca Ri Ni An Do curry powder

  • 4 pieces of rubbed chicken thighs

Instructions

  1. Remove fat from chicken

  2. Mix spices and curry powder together (not ketchup)

  3. Rub spices onto chicken

  4. Cover and leave for at least half a day

  5. Smash lemon grass, not squish, just hit it and leave it with the chicken

  6. When cooking, add lots of ketchup
